Use 'uname -m' for processor on Cygwin (#10774)
POSIX requires 'uname -m' but not 'uname -p': http://www.opengroup.org/onlinepubs/9699919799/utilities/uname.html Indeed Cygwin 'uname -p' returns "unknown".
